HONG KONG’S PENICILLIN PUB WAS NAMED MOST SUSTAINABLE BAR 2021

Hong Kong’s Penicillin has been named the 2021 winner of the Ketel One Sustainable Bar Award by Asia’s 50 Best Bars, replacing Malaysia's Bar Trigona which has held the title for two years since 2019. 

This award recognises the bar that exemplifies the highest commitment to sustainability, ethical sourcing and the wider community, based on an independent audit carried out by Food Made Good Global.

Opened in November 2020, Penicillin is named after a modern classic cocktail made with honey, lemon, ginger, a dose of Scotch, and a splash of smoky Islay whisky.

The pub takes up 1,520sq ft of space of the former Buddha Lounge on Hollywood Road. Operating with a lab, bar, kitchen, and a fermentation room, the venue focuses on recycling and upcycling ingredients that would typically end up in the bin.

From upcycling potato peels into bar snacks, recycling paper and leftover ingredients into handmade bottle labels, the bar has been creatively thinking of new ways to reduce its carbon footprint.

Pubs in Hong Kong were allowed to reopen from yesterday and operate past midnight only for vaccinated residents.

The city’s pubs had been ordered to shut since November but some have managed to operate until 10 pm by getting a licence to serve food.
