ASIA’S BEST RESTAURANT WINNER CHEF TON OF BANGKOK IS OPENING NIRAS IN HK

Winner of Asia’s 50 Best Restaurants 2023, Bangkok Chef Thitid “Ton” Tassanakajohn, is opening a sister restaurant of his Asia Best Le Du in Hong Kong.
To be named Niras, which refers to the journey of Thai poets of the olden times, the new restaurant is slated to open next month in K11 Musea in Tsim Sha Tsui area of Hong Kong.
At Niras, diners can expect some parallels with Le Du, including the signature river prawn dish, which features crustaceans sourced from the Tapi river in Thailand's Surat Thani province, served with a mixture of two types of black rice and a sauce of the prawn heads infused with tom yum spices.
It is the only dish that will be exactly the same as the one at Le Du. Other creations will be given their own characteristics adapted to ingredients available in Hong Kong yet following the same essence of the main restaurant in Bangkok.
Niras will offer both a lunch and dinner menu ranging from four to six courses, and will be open seven days a week.
Incorporating Hong Kong’s seasonal ingredients from the sea, the local creations will include dishes like crab with mushroom and homemade Sriracha, and Massaman duck curry.
"We will have a lot of Thai ingredients that we will bring in as well, but then we will also combine them with international ingredients that you have in Hong Kong," said Chef Ton.
"I think it's very interesting because of course there would be similar dishes, but then the approach and everything might be different according to the ingredients that we can find in Hong Kong as well."
Niras’ kitchen will be headed by Chef Naruemon “Mai” Ratiphuthilap, who has worked in the kitchen of Le Du, and Sarocha “Bua” Rajatanawin, who used to work in the Waldorf Astoria Bangkok.
Chef Ton is a double winner in Asia’s 50 Best Restaurants 2023, his Nusara restaurant was named No.3 along with Le Du in the top spot.
